Fall at #BuschGardens and Vegan Halloween Sugar Cookies

We may not have leaves turning, but here in Florida we do have easy access to Busch Gardens…and fall is the perfect time for a getaway. Check out pictures, a video of Falcon’s Fury and a recipe for Vegan Halloween Sugar Cookies.

Busch Gardens

We interrupt school, soccer and dance and a generally busy fall to bring you Busch Gardens, Part II. In case you missed it, we beat the back-to-school blues in August with a trip to Busch Gardens. It was jam-packed with rides and animals.

But, we didn’t do everything…not even close. Thank goodness we had a second trip planned. Fall is the perfect time to visit Busch Gardens. It’s cooler, the crowds are a little smaller and the hustle and bustle of daily life is easily left behind, at least for a day. The only decision you have to make is what to do next.

Busch Gardens, Part II

Conquering Falcon’s Fury was at the top of our list. It officially opened in September and as you may recall, we looooove thrill rides. Check out the video.

The scariest part is hanging for a few seconds at the very top before you “fly like a falcon” to the bottom. 🙂

I looove the animals even more than the rides. On both visits it was so easy to get a glimpse of their personalities.

This Meerkat was near the Edge of Africa. His buddies are scampering around through tunnels. This one stopped momentarily to pose for a pic!

Meanwhile, the big cats were snoozing…RIGHT BY THE GLASS. My zoom would never be able to capture this otherwise.

Check out his buddy. This lion nestled right up against the glass for a snooze, just a like a house kitty or our pup Sirius.

The elephants ate and so did the giraffes and zebras. And, there was lots of monkeying around. We enjoyed the Iceploration® show and planned a visit to Howl-O-Scream (props and secretive areas lurked at every turn.)

Vegan Halloween Sugar Cookies

Vegan Halloween Sugar Cookies

It’s our go-to sugar cookie recipe that always holds it’s shape and provides a blank canvas for creativity!

Halloween Sugar Cookies

Use this tried and true sugar cookie recipe to make Halloween creations! Can be made vegan!

Ingredients

  • 1 cup Butter or vegan substitute 2 sticks
  • 1 1/2 cups Sugar
  • 1 Egg or egg-replacer we used 1 teaspoon baking powder, 1 Tablespoon vinegar, 1 Tablespoon water
  • 2 teaspoons Vanilla extract
  • 3 cups Unbleached all-purpose flour
  • 1/2 teaspoon Salt
  • Powdered Sugar for dusting work surface
  • Assorted sprinkles and icing

Instructions

  • Preheat oven to 350 degrees F.
  • Cream butter and sugar together with an electric mixer for about 5 minutes until light and fluffy.
  • Prepare egg replacer in a separate bowl, if using
  • Add egg replacer (or egg) and vanilla to creamed butter mixture and stir to combine.
  • Add flour and salt to butter mixture and stir to combine.
  • Chill dough for about 10-15 minutes.
  • Sprinkle work surface with powdered sugar to prevent sticking.
  • Roll cookie dough to 1/4 inch thickness using a rolling pin.
  • Use cookie cutters to make various cookie shapes.
  • Bake cookies on a parchment-lined baking sheet for 7-9 minutes. Note that the cookies will continue to set after they are removed from the oven and should not be brown when you take them out.
  • Allow cookies to cool completely.
  • Lightly frost and decorate.
