Dark Chocolate Avocado Pudding is creamy, decadent and delicious...and just happens to be vegan too!
Happy Halloween! Would you like a trick or a treat? How about both in one fantastic dessert?!
The trick?
I'm known for being sneaky on occasion...and, totally getting away with it. Zucchini brownies anyone? {wink}
So trust me when I tell you that I'm pretty darn sure no one can tell that this decadent dark chocolate pudding gets its smooth, silky texture from avocados. You can't taste the avocado. I pinky promise!
Furthermore, since this "trick" (i.e. avocado) is praised for its health benefits, you don't need to feel a bit guilty about the deception!
Oh yeah...and there's dark chocolate and cocoa powder involved too...also on the healthier side of decadence.
Dark Chocolate Avocado Pudding is Definitely a Treat!
This pudding, or mousse in some circles, is a blank canvas waiting to be personalized...
The purist will savor each bite...unadorned.
Kids will be kids. Mine like to scoop it on to pretzel chips. Sweet and salty goodness in each bite.
Raspberries and strawberries...there's nothing quite like fruit and chocolate.
How about a sprinkling of coconut flakes?
Or, just a few more chocolate chips?
Or...googly eyes? Yep!
Well, it is Halloween, and those googly eyes have been staring at me from the pantry at every turn.
So, here it goes...one more time...for the sake of Halloween and all things fun and spooky.
Ha! I hope you get a good laugh at my second try at spooky (Baked Chicken Parmesan Meatball eyeballs were the first attempt!)
Luckily, I'm out of googly eyes...at least until next year. 🙂
Dark Chocolate Avocado Pudding
Ingredients
- ½ cup dark chocolate chips I chopped up 12 Dove Dark Chocolate squares
- 4 Haas avocados, very ripe pitted and skin removed
- ½ cup honey or agave nectar for vegan version
- ½ cup unsweetened cocoa powder
- ½ cup skim milk rice milk, almond milk or coconut milk will work too
- 1 Tablespoon vanilla extract
- ¼ teaspoon salt
- 1 Tablespoon sugar - optional
Instructions
- Place chocolate chips in a microwave safe bowl and microwave on high for 30 second intervals, stirring at each interval, until melted and smooth.
- Add chocolate and remaining ingredients to a food processor and pulse until smooth, scraping sides as necessary.
- Refrigerate 2-3 hours before serving.
