Mediterranean Baked Fish

Easy, low-carb, recipe that you layer and bake in the oven. 

-White fish    like cobia, cod,   or haddock -Artichoke hearts -Cherry tomatoes -Balsamic vinegar -Olive oil & Salt -Garlic -Feta cheese

You'll Need:

Place fish fillets in a baking dish. Layer chopped artichokes and sliced cherry tomatoes on top and around fish.

Combine extra virgin olive oil, balsamic vinegar, pressed garlic, and salt in a small bowl. Pour it over the fish and vegetables.

Bake for 15-20 minutes.  The exact time will vary depending upon the type and thickness of fish.

The fish should be white, moist, and flaky!

Top with feta cheese!
