Spaghetti Squash Au Gratin Muffins

Healthy, low-carb, keto side dish recipe that will be the star of your holiday table.

       You'll Need: -Spaghetti squash -Olive oil –Onions  –Garlic powder –Greek yogurt    or sour cream –Cheddar cheese –Eggs

Cook spaghetti squash WHOLE in a slow cooker or the oven!

     Slow Cooker -Poke holes in  gourd. -Place in slow  cooker. -Cook until knife  is easily inserted.  High 3-4 hours,  Low-5-6 hours. -Cool, cut in half,  and remove  strands.

          Oven -Poke holes in  gourd. -Place on baking  sheet in 425 °F   oven. -Cook about 1  hour, rolling  halfway through  or until knife  is easily inserted -Cool and cut.

Sauté diced onion and add to bowl with spaghetti squash strands.

Add Greek yogurt, garlic powder, eggs, and cheddar cheese to the bowl.

Stir to combine and add to a muffin pan.

Top with more cheese.

Bake at 350 °F for about 25 minutes or until starting to brown.

Make-ahead as cute little egg muffins or a traditional casserole.
