Mediterranean Chicken Bake

Crazy Good Mediterranean chicken bake is a low-carb, ket-friendly, one dish meal with tomatoes, artichokes, zucchini, balsamic vinaigrette and a sprinkling of crumbled feta cheese.

Ingredients

  • 4 boneless skinless chicken breast
  • Salt and pepper to taste
  • 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 14 ounce quartered artichoke hearts drained
  • 1 pint cherry tomatoes halved
  • 1 large zucchini sliced and quartered
  • 1/4 cup reduced fat feta cheese crumbled

Instructions

  • Prepare ingredients as indicated.
  • Preheat oven to 350 degrees.
  • Place chicken in a baking dish. Season with salt and pepper.
  • Layer tomatoes, artichokes and zucchini on top of the chicken.
  • Whisk together the olive oil, balsamic vinegar, garlic and salt.
  • Drizzle vinaigrette over the top of everything.
  • Bake for about 30 minutes or until chicken is no longer pink and temperature reaches 170 degrees.
  • Top with feta cheese before serving.
