¼cupfresh cilantrochopped (more to taste!)
1bunchgreen onionssliced
3cupscooked and cubed or shredded chicken
½cupcashewschopped
1headleafy lettucewashed, dried and separated into single pieces
Dressing
¼cupcanola oil
1Tablespoonhoney
2Tablespoonsseasoned rice vinegar
1teaspoonsoy sauce or coconut aminos
½teaspoonsesame oil
Instructions
To make the dressing, add the ingredients to a jar with a tight-fitting lid and shake to combine.
Combine sliced cabbage, chopped green onions, and chopped cilantro in a large bowl. Toss with sesame soy dressing, reserving a few tablespoons of the dressing for drizzling over the finished wraps or to use as a dipping sauce.
Fold in diced chicken into the cabbage mixture.
Divide the cabbage and chicken between the lettuce leaves and top with cashews. The amount will vary depending on the size of the lettuce leaf.
