Pumpkin Pizza with Caramelized Onions and Spinach

Give pizza night fall flare with Pumpkin Pizza. Creamy, cheesy pumpkin sauce is slathered on flat bread and topped with caramelized onions and spinach.

  • 1 Tablespoon butter
  • 1 Tablespoon olive oil
  • 3 yellow onions sliced thin (about 2 cups)
  • 4 slices flat bread
  • 2 cups Pumpkin Pasta Sauce
  • 2 handfuls of baby spinach leaves stacked, rolled and cut into slivers
  • 2 cups shredded mozzarella cheese


  • Melt butter in a large pan over medium-low heat.
  • Add olive oil and onions to pan and stir to coat.
  • To caramelize onions, cook onions over medium-low heat for about 30 minutes. Check and turn onions every 5-10 minutes until the onions are brown, but not burnt.
  • Prepare flat bread according to instructions. (I pre-baked mine for 2 minutes in a 375 F oven.)
  • Spread about 1/2 cup of Pumpkin Pasta Sauce over each slice of flat bread.
  • Layer 1/4 of the onions, spinach and mozzarella cheese over the sauce.
  • Return flat bread to the oven and cook for 4-5 minutes more or until cheese has melted.


Use one cup of Slow Cooker Caramelized Onion instead of making them scratch on serving day!
