Ingredients
½
cup
cottage cheese
any type will work
¼
cup
pumpkin puree
⅛
teaspoon
pumpkin pie spice
1
teaspoon
sweetener to taste
the equivalent of 2 teaspoons of sugar. See suggestions above.
Instructions
Add everything to a small food processor and blend for 1 minute or until smooth.
Add toppings if desired and enjoy!

Tips:
Use a small food processor or stick blender to make one or two servings. Larger appliances won't be able to handle the small amount.
A high-powered blender will puree it too quickly. If using, pulse.
If it's too thick, add a drop of two of water or a dash of vanilla extract.
Just a drop!
You can add chia seeds to absorb some of the liquid if it's too thin. It's a slightly different result. But it does the job.
If you use honey or maple syrup, the consistency will be thinner.
Storage:
Store pumpkin cottage cheese that has been whipped in an airtight container for 5-7 Days. Stir to incorporate ingredients, if necessary.
