Homemade Granola with Dried Cherries, Dates and White Chocolate

Ingredients

cups
old fashioned rolled oats
NOT the quick-cooking kind

cup
ground flax seed

teaspoon
cinnamon
1
teaspoon
salt
¼
cup
brown sugar
¼
cup
honey
¼
cup
canola oil
1
Tablespoon
vanilla extract
½
cup
dried cherries or cranberries
½
cup
dates
chopped
¼
cup
chopped white chocolate
Instructions
Preheat oven to 300 degrees F.
Combine oats, flax seed, cinnamon and salt in a large bowl.
In a separate small bowl, stir together sugar, honey, oil and vanilla.
Stir wet mixture into dry mixture, using your hands to toss until the mixture is evenly coated and crumbly.
Spread mixture in an even layer on a baking sheet lined with parchment paper.
Bake for about 30 minutes, stirring every 10 minutes, until browned.
Granola will continue to crisp as it cools.
When cooled to room temperature, stir in dried fruit and chocolate.
Notes
Store at room temperature in an air tight container.
