Combine all of the ingredients in a large bowl. Allow ingredients to mingle for about 15 minutes for the best result.

Salsa can be made a day ahead of time and stored in the refrigerator in airtight container up to 5 days. The flavors mingle and still taste wonderful the next day.
Over fish or make tacos - make Lemon Pepper Tilapia. Stir some slaw mix into the salsa and drizzle with aioli (¼ cup mayonnaise, 1 garlic clove, 1 Tablespoon lemon juice, pinch paprika)
