Homemade Granola with Dried Cherries, Dates and White Chocolate

Ingredients

  • 3 cups old fashioned rolled oats NOT the quick-cooking kind
  • 1/4 cup ground flax seed
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup canola oil
  • 1 Tablespoon vanilla extract
  • 1/2 cup dried cherries or cranberries
  • 1/2 cup dates chopped
  • 1/4 cup chopped white chocolate

Instructions

  • Preheat oven to 300 degrees F.
  • Combine oats, flax seed, cinnamon and salt in a large bowl.
  • In a separate small bowl, stir together sugar, honey, oil and vanilla.
  • Stir wet mixture into dry mixture, using your hands to toss until the mixture is evenly coated and crumbly.
  • Spread mixture in an even layer on a baking sheet lined with parchment paper.
  • Bake for about 30 minutes, stirring every 10 minutes, until browned.
  • Granola will continue to crisp as it cools.
  • When cooled to room temperature, stir in dried fruit and chocolate.

Notes

Store at room temperature in an air tight container.
