1medium apple (about 5-6 ounces)sweet and crisp, such as Cosmic Crisp, Ambrosia, Honeycrisp or Royal Gala
⅛teaspoonground cinnamon
1Tablespoonoatsold-fashioned rolled oats or quick oats.
½teaspoonhoneymaple syrup, or preferred low-carb sweetener
Instructions
Remove the core from the apple using an apple corer or paring knife, leaving the bottom intact, if possible. If you cut all the way through, plug the opening with a piece of the removed apple. There's no need to peel the apple.
Use a paring knife or vegetable peeler to remove a small strip of skin around the opening so the cinnamon adheres easily. Sprinkle the cinnamon inside the cavity and over the exposed apple flesh. Stir any leftover cinnamon into the oats.
Spoon half of the oats into the cavity and drizzle with half of the honey. Add the remaining oats and honey.
Place the stuffed apple in a microwave-safe bowl and cover with a microwave-safe lid or paper towel. Microwave on high for about 3 minutes, or until fork-tender. If needed, continue microwaving in 30-second intervals.
Let cool for 2–3 minutes; the apple will be very hot. Spoon any juices from the bottom of the bowl over the apple before serving.
Notes
Microwave timing: A medium 5–6 ounce apple takes about 3 minutes in my 1,000-watt microwave. Microwave wattage and apple size will affect cooking time. Larger apples may need another 30–60 seconds.Variations: Use granola instead of oats for a crunchy filling, or add chopped nuts or dried fruit. Apple pie spice or pumpkin pie spice can be used instead of cinnamon.
