Slow Cooker Chicken and Quinoa is an easy one-pot dinner with Tex-Mex flavors. Even the quinoa cooks in the slow cooker; there's no need to prepare it separately. Add your favorite toppings for easy fajita bowls.
1poundchicken breastscut into cubes; or may be left whole and shredded before serving
Fajita Seasoning
1packet or
½teaspoonchili powder
½teaspoonsalt
½teaspoonpaprika
½teaspoongarlic powder
¼teaspooncumin
⅛teaspooncayenne pepperoptional for a bit of heat
Instructions
Add quinoa, diced tomatoes with juices, black beans, sliced onions, bell peppers, and broth to the slow cooker and stir to combine.
Layer chicken pieces on top and sprinkle with fajita seasoning.
Cook on high for 3-4 hours or low for 5-7 hours.
Serve with favorite toppings.
