This is one of those I didn't know that I needed it so badly until I tried it. And, now that I've tried it, I can't go back.
It's a DIY Kitchen Staple. That is, items you can buy from the store but choose not to because your homemade version is much healthier and tastes so much better. At the bottom of this post you'll find all kinds of recipes from the nutritionist and healthy-minded food bloggers in this group. It's so much fun to take a peak and see what's in their pantry or fridge. 🙂
Easy, Homemade Blueberry Compote
We use it in place of syrups and jams and as a sweetener. Even though it gets a big dose of sweetness from the blueberries, I usually add a little more. But...I control what kind of sweetener and exactly how much. I used a pure Stevia/sugar blend. I also add a bit of cinnamon for even more flavor.
The berries can be fresh or frozen...which means, you can make this year round if you stock your freezer right. The picture above used frozen berries. Fresh berries were used in the version below. I don't find a big difference in taste, but the compote with fresh berries seems to thicken up a little more. I've included a suggestion in the recipe instructions for thickening with corn starch, if desired.

10 Ways to Use Blueberry Compote
It can be used at least 10 ways...and I'm sure you can think of some more:
1) Spoon it over oatmeal (or steel cut oatmeal made in the crock pot.)

2) Swirl it into yogurt or vanilla chia seed pudding.
3) Ladle it on top of ice cream.

4) Top waffles or pancakes with it.

5) Drizzle it over regular or no-bake cheesecake .
6) Fill a crepe with it!
7) Spoon it over short cake.
8) Make a smoothie.
9) Or a milkshake!
And last, but not least:
10) Mix it into your favorite regular BBQ sauce for Blueberry Barbecue Sauce and serve it over pork or chicken.

Sugar-free Blueberry Compote (and ways to use it)

Ingredients
- 2 cups fresh or frozen blueberries
- 3 Tablespoons water
- 2 Tablespoons Stevia Blend to equal the sweetness of ¼ refined sugar
- 1 Tablespoon lemon juice
- ¼ teaspoon cinnamon
Optional thickener
- 1 teaspoon cornstarch
- 2 teaspoons water
Instructions
- Place 1 cup of blueberries, water, sweetener and lemon juice in a small pot and stir to combine.
- Cook over medium heat for about 10 minutes, stirring several times.
- Add remaining blueberries and cinnamon to pot and continue cooking for about 5 more minutes.
- If desired the sauce can be thickened by adding a slushy mixture of cornstarch and water during the last 5 minutes of cooking.
- Combine cornstarch and water in a separate bowl and stir until mixture is free from lumps before adding it to the blueberry mixture.

This is my ‘go to’ recipe for making compote. I do change it up a bit by using honey instead of stevia. My only use is on waffles or pancakes so far. I make it ahead of time before our annual jaunt to a sap house for pancakes in February.
