    I'm always on the lookout for healthy pumpkin desserts, especially ones that are simple and easy to make. This one provides almost instant gratification in the form of creamy cottage cheese with pumpkin cheesecake flavor.

    Like cottage cheese dessert cups, the curds are pureed until the texture is almost smooth. But this recipe has a seasonal spin with the additions of pumpkin and pumpkin pie spice.

    Ingredients

    Here's what you'll need to make blended Pumpkin Cottage Cheese:

    Labelled ingredients to make recipe: pumpkin puree, cottage cheese, sweetener, and pumpkin pie spice.
    • Cottage cheese - There are so many different types of cottage cheese on the market. You'll find all sizes of curds, varying sodium content, and different percentages of fat. All of them will work in this recipe. If you already have a particular type or brand of cottage cheese in your refrigerator, use that.
    • Pumpkin puree - Pumpkin pie filling is already sweetened and spiced, so don't use that. Fresh pumpkin puree is definitely an option.
    • Pumpkin pie spice - If you don't have any, use cinnamon, which is the main ingredient in this blend. If you happen to have ginger, allspice, cloves, or nutmeg, add a pinch of one of these too.
    • Sweetener - Any sweetener will work in the recipe, from Stevia or sugar to honey or maple syrup. However, the consistency will be much thinner if a liquid form is used.

    Directions

    The directions for whipping pumpkin cottage cheese are easy:

    Add everything to a small food processor and blend for 1 minute or until smooth. Taste and adjust as necessary to get the sweetness and spice flavor just right.

    Sounds simple. And it is. But the result will vary depending on the equipment used and the exact quantities and ingredients.

    It will be smooth and creamy...to a point. However, I've never achieved a silky pudding-like consistency. I'm just setting the expectations. Here's an up-close look at a spoonful.

    You can make adjustments. So let's troubleshoot!

    • Use a small food processor or stick blender to make one or two servings. Larger appliances won't be able to handle the small amount.
    • A high-powered blender will puree it too quickly. If using, pulse.
    • If it's too thick, add a drop of two of water or a dash of vanilla extract. Just a drop!
    • You can add chia seeds to absorb some of the liquid if it's too watery. Wait a few minutes for the seeds to gel. It's a slightly different result. But it does the job.
    • If you use honey or maple syrup, the consistency will be thinner.

    • Dried fruit, like cranberries or raisins

    Storage

    Store pumpkin cottage cheese that has been whipped in an airtight container for 5-7 Days. Stir to incorporate ingredients, if necessary.

    It's a great recipe to make ahead because it's enjoyed chilled.

    • ¼ cup pumpkin puree
    • ⅛ teaspoon pumpkin pie spice
    • 1 teaspoon sweetener to taste the equivalent of 2 teaspoons of sugar. See suggestions above.
