Slow cooker beef shoulder roast cooks until tender enough to slice, then gets smothered in rich red wine mushroom gravy. With just 15 minutes of prep, it’s an easy pot roast that feels special without much hands-on work.

Notes from my kitchen
This beef shoulder roast was one of the most popular dinners at our meal assembly stores, and I think the distinctive gravy had a lot to do with it.
The sauce ingredients may sound like an unusual combination. But red wine, ketchup, Dijon mustard, Worcestershire sauce, and mushrooms cook down into an incredibly rich and tangy sauce.
I always have plenty of cauliflower mash on hand to soak up every last drop of the gravy, which becomes silky smooth once it thickens in the crock-pot.

Ingredients
Here's what you'll need to make this slow cooker beef shoulder roast recipe:

Of special note:
- Boneless beef shoulder roast - This relatively lean cut becomes tender in a slow cooker but still holds together well for slicing. Look for a boneless shoulder roast, shoulder clod roast, or English roast. Chuck roast also works, but it has more fat and tends to fall apart more easily.
- Mushrooms - I often use white mushrooms because they are readily available, but shiitake mushrooms, with a deep, slightly smoky flavor, are one of my favorites for a special occasion. Cremini or baby bella mushrooms work well too. Use up to 16 ounces if you really love mushrooms.
- Red wine - I used Merlot wine. But Cabernet Sauvignon or Pinot Noir also work well. Choose a dry red wine you enjoy drinking, not a sweet one.

How to make beef shoulder roast in a slow cooker
Use these pictures as a guide when you make the recipe:
Brown the shoulder roast

Sear the beef on both sides until nicely browned. This step is optional but adds extra flavor.
Combine the sauce ingredients

Whisk together the ketchup, red wine, water, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper.
Layer ingredients in a slow cooker

Add the shoulder roast, mushrooms, and onions to the slow cooker, then pour the sauce on top. Cook on low for 4-6 hours or on high for 3-4 hours. It should be fork-tender and easy to slice.
Thicken the sauce

Remove the cooked roast, then stir in a cornstarch slurry and cook on high to thicken the sauce into gravy.
FAQ
I prefer low heat because the roast cooks more gently and stays tender while still holding together for slicing. Check for doneness at the beginning of the range.
If the roast is still tough, it usually needs more time. Continue cooking until a fork or sharp knife slides in easily. However, because shoulder roast is leaner than chuck, avoid cooking it much longer than needed once it becomes tender.
What to serve with beef shoulder roast
For an everyday dinner, I like to keep the sides simple and let the red wine mushroom gravy do the heavy lifting. Roasted cauliflower rice is a lighter option that works especially well with the rich sauce, while crispy green beans or Parmesan broccoli bites add a green vegetable.
For a special occasion, I usually make crock-pot mashed potatoes with cream cheese and serve rolls to sop up the gravy.
And if I’m turning it into a full celebration dinner, flourless chocolate cake with ganache is a decadent finish.

- 2 Tablespoons Worcestershire sauce
- 4 garlic cloves, minced
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 Tablespoons corn starch
- 3 Tablespoons water

- Mix the cornstarch with 3 Tablespoons of cold water. Add the cornstarch mixture to the juices in the crockpot and stir. Turn the heat to high and cook for 10-15 more minutes.

This is the best pot roast I've ever made, and I've used many pot roast recipes over the years! I followed the recipe, with one exception. I used canned sliced mushrooms as that's all I had. This was easy to put together and was really delicious!! Thank you for this recipe! It's definitely a keeper!!

I'm so glad you enjoyed it!
Angie says
For doubling the sauce arenyou doubling all ingredients other than the roast. I know probably a silly question but wanted to check. Excited to make this!!
Marjory Pilley says
Yes! Double mushrooms and onions too.
Jon says
Hello,
Making this today! When should I add the potatoes and carrots?
Marjory Pilley says
Hi! You can add these at the beginning or even a few hours afterward if you like!
John says
Does it matter if I put the roast on top of the veggies or bottom?
Keith says
First time I didn’t use bullion in the sauce and I used onion salt instead of real onions because of stomach issues, but the sauce was so tasty!
Amber says
When you add the cornstarch slurry to the slow cooker at the end, do you leave it open or cover it with a lid to thicken for the 10 to 15 minutes on high?
Marjory Pilley says
Hi! The cornstarch should thicken it either way. But, I typically leave it off.
John Rhodes says
What can i use instead of the wine
Marjory Pilley says
Try a red grape juice! It should substitute one for one. To make the juice less sweet add a 1/2 teaspoon of vinegar or more to taste, if desired.
Ed Jenkins says
Tried this tonight, doubles as we had lots of meat. It was good, the wine didnt cook off. Next time ill add a bit of sugar as the red wine taste was very overpowering.
