I make my whipped cottage cheese dessert year-round because it's low in carbs and high in protein. But when the leaves start turning, I give it a fall spin and make this version instead.
It has plenty of pumpkin, so the flavor doesn’t get lost behind the cottage cheese. Pumpkin pie spice adds the warm flavor I expect in fall.
Once everything runs through a food processor, you won't find any curds. Its texture is light and airy and tastes a lot like pumpkin cheesecake.
It’s easy to scale up for a crowd and is even better topped with chocolate chips, walnuts, or whipped cream.

Here's what you'll need to make this pumpkin cottage cheese recipe:

- Cottage cheese - I used a low-sodium cottage cheese with 2% milk fat. Higher milk fat gives a slightly creamier result. Many different types of cottage cheese are on the market. You'll find all sizes of curds, varying sodium content, and different percentages of fat. All of them will work in this recipe, so use your favorite.
- Pumpkin puree - I used canned pumpkin puree. Fresh is also an option. Don't use pumpkin pie filling since it is already sweetened and spiced.
- Pumpkin pie spice - If you don't have any, use cinnamon, which is the main ingredient in this blend. If you happen to have ginger, allspice, cloves, or nutmeg, add a pinch of one of these too.
- Sweetener - I use a 50% less sugar blend with real and artificial sweeteners. Any type will work, from sugar to honey or maple syrup. However, the consistency will be thinner if you use a liquid sweetener.
If you have leftover pumpkin puree and cottage cheese, use it to make pumpkin chaffles!

How to make pumpkin cottage cheese dessert
Add everything to a small food processor and blend for 1 minute. Taste and adjust the sweetness and spice intensity, if necessary. Scrape the sides and blend for another minute or until smooth and creamy. Don't overmix, as it may become watery.

The result will vary slightly depending on the equipment and exact type of cottage cheese and sweetener you use, with higher-fat cottage cheese yielding the smoothest result.
Here is an up-close look at a spoonful made with my go-to cottage cheese. It may look a little grainy, but I promise the curds aren't noticeable when you eat it.

Top tips
- Use a small food processor or immersion blender to make one or two servings. Larger appliances won't be able to handle a small amount. I wasn't successful using a bullet blender either.
- Use a full-sized food processor or an immersion blender if you scale up the recipe.
- If it's too thick, add a drop or two of water or a dash of vanilla extract. Just a drop!
- If it's runny, chill it in the refrigerator or strain off extra liquid with a fine mesh strainer.
How to top pumpkin cottage cheese
My favorite toppings are a sprinkling of dark chocolate, chopped nuts, or a dollop of whipped cream.
