Cheesy hash browns and ham are combined with a custardy egg mixture and then baked to perfection in this easy recipe. It smells divine and will quickly disappear when it's out of the oven too!
I know because we often have this overnight breakfast casserole on Christmas morning, for Easter brunch, on Father's Day, or for lazy weekends.
Like overnight ham strata, it's the perfect dish for special occasions and holidays because you can make it ahead of time. The next morning, simply pop it in the oven, and enjoy the festivities with everyone else!

Here's what you'll need to make this easy hashbrown breakfast casserole recipe:
- Hash browns, like the fresh potatoes in the refrigerated Simply Potatoes packages, are a big time-saver! You can also use frozen shredded potatoes instead; make sure to break up any clumps before using them.
- Evaporated milk - Use full fat for the creamiest result.
- Ham - Pork sausage, turkey sausage, and bacon or a combination can also be used.
- Shredded Cheese - Cheddar Jack, Cheddar cheese, Colby Jack, or Monterey Jack all work well in this recipe. Pepper jack cheese can be used for a stronger flavor. I've heard that Swiss cheese and Gouda are options, too.
- Green Onions - Sweet onions can be used instead.
Variations: Add green or red bell peppers, broccoli rice, or other favorite veggies. For a bit of heat, add a dash of hot sauce.

It takes minutes to prep this cheesy hashbrown breakfast casserole with Simply Potatoes:
- Layer shredded potatoes over the bottom of a casserole dish sprayed with nonstick cooking spray.
- Layer ham, green onion, and cheese over the shredded potatoes.
- Whisk eggs, evaporated milk, salt, and pepper in a small bowl that pours, if possible.
- Evenly pour the egg mixture over the ingredients in the casserole dish.
- Bake, uncovered, until the egg mixture sets and it is slightly browned on top. Allow the hash brown breakfast casserole to sit untouched for 5-10 minutes before cutting.
Note: We used an 8 x 11 baking dish.
Storage and Make-Ahead
You can store this Simply Potatoes breakfast casserole with hash browns in the refrigerator or freezer before or after you cook it!
- Leftovers - Store in an airtight container in the refrigerator for about 3 days or in the freezer for up to 2 months.
- Make ahead - Assemble in the dish you will cook it in, but don't bake it. Cover tightly with plastic wrap and aluminum foil. Store in the freezer for up to 2 months. When you're ready to enjoy it, defrost it in the refrigerator overnight and cook it as usual.
What to Serve with a Hashbrown Breakfast Casserole
This hearty overnight breakfast casserole is almost a complete meal. But if you're entertaining or it's a special occasion, round out the meal with these favorites:
- Bacon because almost everyone loves bacon!
- Muffins such as Carrot Cake Muffins or Greek Yogurt Pumpkin Muffins, depending on the season.
- Spinach Feta Egg Cups or Zucchini Egg Bites - These are bite-sized veggie and egg muffins you can make in advance too!
- Deviled eggs are perfect for a larger gathering!
- Breakfast sausage patties
- A variety of fruits or quinoa fruit salad
- Sour cream - add a dollop on top!

Hash Brown Breakfast Casserole Recipe with Simply Potatoes
Ingredients
- 4 cups shredded potatoes like Simply Potatoes; break any clumps apart if frozen.
- 8 ounces ham diced; about 1 cup
- 1 cup Cheddar Jack cheese shredded; Other options: Monterey Jack, Colby Jack, Cheddar
- 4 eggs
- 8 ounces evaporated milk
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 350°F.
- Layer shredded potatoes at the bottom of a casserole dish sprayed with nonstick cooking spray. Layer ham, green onion, and cheese over the shredded potatoes.
- Whisk eggs, evaporated milk, salt, and pepper in a small bowl.
- Evenly pour egg mixture over the top of the ingredients in the casserole dish.
- Bake, uncovered, for about 40 minutes or until the egg mixture sets and it is slightly browned on top.
- Remove from oven and allow casserole to rest for about 10 minutes before serving.

If not should I bake them first?
If fry them they end up soft.
