Ingredient Notes
Here's what you'll need to make creamy and delicious mayo-free egg salad with avocado:
- Eggs - We used large eggs.
- Hass avocado - One avocado yields about ¼ cup to ⅓ cup mashed avocado, depending on the size of the pit. I use the entire amount and adjust the consistency as needed with a little bit of water.
- Dijon mustard - Use stone ground mustard to add an additional kick!
- Apple cider vinegar, lemon juice, or lime juice may be used.
- Salt and black pepper to taste.
Optional mix-ins:
- Fresh herbs, like chives, dill, and cilantro, add bright flavor to the salad. Dried herbs can be used instead.
- Diced celery or bell peppers add a nice crunch.
- Diced red onion, green onion, or pickled pink onions give it a zesty punch.
- A sprinkle of sweet paprika for color.

Here's how to make this avocado egg salad recipe:
Make Hard Boiled Eggs
Here are 2 easy ways to do it.
- In an Air Fryer: Place eggs in the basket. Cook at 250 °F for about 16 minutes. Tip: If it's your first time using this method, try it with 1 or 2 eggs first. We make hard-boiled eggs in our Ninja air fryer all the time! It's so easy to do.
- On the Stovetop: Put eggs in a pot, cover with water, and bring to a boil. Turn off the heat and let sit for 10-12 minutes.
The next step under either method is to immediately transfer the eggs to a bowl filled with ice-cold water for at least 5 minutes or until cool to the touch. The ice bath stops the cooking process. When done, remove with a slotted spoon and pat dry.
Combine Ingredients:
Peel eggs, cut in half, and remove the yolks to a medium-sized bowl. Chop the egg whites into small pieces.
Crumble four of the yolks with a fork. Reserve the remaining two yolks for another use for a creamier mixture.
Stir mashed avocado, Dijon mustard, apple cider vinegar, and salt together, then mix with the yolks.
Fold in chopped eggs and any optional ingredients. Taste and season with more salt, if necessary.
Top Tips
- Freshness counts: Use ripe avocados for a creamy texture.
- Mix well and in steps: Use a fork to mash the avocado until fairly smooth. Next, mix with crumbled yolks, mustard, and vinegar before folding in the egg whites. You don't need to use a food processor, but you can to achieve a very smooth texture.
- Consistency: If the avocado mixture is too thick, add a few drops of water to thin it.
Storage
Store leftover egg salad in an airtight container in the refrigerator for about 24 hours. Drizzle a small amount of lemon juice over the top and cover with plastic wrap to prevent excess browning.
It's best to make just what you plan to use because it tends to start browning if stored for too long.
Low-Carb Serving Suggestions
Enjoy this creamy egg salad on romaine lettuce leaves, wrapped in low-carb tortillas, layered on thin-sliced bread, atop delicious cauliflower waffles, or with a big bowl of low-carb tortilla chips.
