Breakfast Guacamole Toast is a thing! I'm here to inform you that you can have guacamole for breakfast! It's healthy, delicious, and exactly what you need to make tomorrow.
It can be low-carb or gluten-free, depending on the type of "bread" you choose! You can even make it very low-carb because it's fantastic on cloud bread and keto chaffles.
I'm forever thinking of ways to use guacamole dip because it's easy to make and always a crowd-pleaser. We've stuffed it in appetizers to make guacamole deviled eggs and guacamole mushrooms.
And, although avocado toast regularly makes an appearance on the breakfast menu, I never thought to whip up one avocado guacamole and slather it on a piece of whole-wheat toast. That is, until I was knee-deep in avocados. I also came up with a list of the best things to eat with guacamole!
Guacamole on toast has a bit of zing from lemon or lime juice. So, it's not exactly the same as avocado on toast. However, the toppings are identical, and we rounded up lots of ideas for inspiration.
Guacamole for one or two
I know exactly what you're thinking. It makes no sense to prepare a big batch of guacamole dip. You can't eat that much in one sitting, and it will go bad unless you're having a party. (If that's the case, make a toppings bar using the ideas below.)
Luckily, it's EASY to make a small batch! I consider these to be the minimum ingredients that can be quickly mixed together with your eyes half shut in the morning:
- Haas avocado - mashed with a fork
- Tomato - diced; we use the plum or Roma variety, but any type will work
- Onion - diced; red, sweet or green
- Lemon juice - or lime juice
- Salt
If you like it spicy, add a pinch of red pepper flakes! And if you have cilantro, use that too!
Mix the ingredients together in a small bowl.
Topping ideas
Breakfast Guacamole Toast can be as simple or extravagant as you'd like. Simply slather it on toasted bread. Or, take it to the next level with any combination of these toppings:
- Bacon
- Eggs cooked any way
- Shrimp
- Vegetables such as peppers, mushrooms
- Pink Pickled Onions - the 5-minute kind that you keep in the fridge.
- Cheese such as cotija, feta, or Monterey Jack
- Hummus
- Salsa
- Fruits such as pomegranate, pineapple, mango
- Seeds including sesame, chia, and pumpkin
- Popped quinoa for a toasty, crunchy addition
- Nuts including walnuts, pine nuts, pecans (toasting makes them even better)

Breakfast Guacamole Toast Recipe
Ingredients
- 1 Haas Avocado
- 1 teaspoon lemon juice
- ⅛ teaspoon salt a "pinch"
- 1 plum tomato diced
- 2 Tablespoons onion diced; red, white or green
- Optionally add a pinch of cayenne pepper or red pepper flakes for heat
- Optionally add 1 Tablespoon chopped cilantro
- 2 slices Whole Wheat Bread, thin sliced or bread of choice
Instructions
- Cut avocados in half and scoop pulp into a bowl. Mash avocado pulp with a fork.
- Mix pulp with lemon juice and salt and then stir in remaining ingredients.
- Toast bread.
- Slather guacamole on bread.
- Add additional toppings if desired and enjoy!
Notes
- Serve over cloud bread or keto chaffles for SBD phase 1 or a very low-carb count.

I'm reading this as I scrape the last of the guac from the bowl. I didn't put it on toast, I sprinkled a few tortilla strips in the bowl and just ate it that way. When I buy bread (Killer Mike's thin wheat) I will make the toast. Thanks for the topping ideas.
